there's an API in the Microsoft RDP ActiveX allowing us to specify custom hotkey definitions for certain shortcuts. These are currently not configurable in Royal TS. I never really looked into it but I converted this topic to a feature request. I will investigate if this works and if this can be used to "remove" hotkeys as well.

Is it possible to exclude a key combination from being passed through to the remote machine?
I find myself using the WIN-+ and WIN-ESC to zoom on my Windows desktop but this key combination is passed through along with the rest making the remote session zoom instead of my desktop.
